They say Breakfast is the Most Important Meal of the Day. And I believe that whoever “they” are… they’re right!
In order to give my best effort to maintaining healthy eating, I prioritize breakfast. In the past, it’s been easy for me to skip…. As an early-riser, I never miss my coffee during Quiet Time. But then the busyness of the morning gets going and it would be super easy to gloss over taking the time to feed myself.
But the truth is…. Breakfast sets the tone for the day. It makes sure I am focused on making good, healthy food choices. It fills me up after the nighttime fast. And it prevents that feeling of starvation that comes from skipping breakfast…..
You know…. You’ve skipped breakfast and then long about 10 or 11 you realize you are S T A R V I N G and will eat anything and everything that does not move. And by that time what you are looking for is something FAST which usually equals UNHEALTHY.
One super quick and easy breakfast is to toast frozen waffles (I used Van’s but there are plenty of healthy/organic/Clean choices) and top them with Crunchy Nut Butter & Fruit.
Another favorite go-to breakfast is Overnight Oats. Making these the night before is another great mental reminder that I AM CHOOSING to eat healthy tomorrow. I already shared the basic Overnight Oats recipe I use. I recently found myself with a nearly empty jar of Peanut Butter…..
So I decided to try a slightly new version of Overnight Oats….
This recipe is from Liz at The Lemon Bowl. It’s similar to the original one I shared and equally delish! I first discovered Liz’s blog from my friend Aggie of Aggie’s Kitchen. These girls have blogs packed with healthy recipes so if you haven’t visited them, GO!!
Starting with a base of 8 oz Unsweetened Almond Milk ~ for my Breakfast Smoothie I added a scoop of Nut Butter + A Handful of Spinach + 1/3 cup of Oats + Frozen Banana/Strawberries/Blueberries.
