I mentioned last week how important breakfast is to keeping on track with healthy eating for me. And basic overnight oats are an easy way to ensure a good start in the morning. But now that the cooler weather has arrived….. I am craving P U M P K I N!
PUMPKIN OVERNIGHT OATS!
Pumpkin Overnight Oats

1/3 cup oats
1/3 cup yogurt (I use Stonyfield French Vanilla)
1/3 milk (I use Unsweetened Almond Milk)
1/3 cup canned pumpkin
1/2 TBSP Chia Seeds
Splash of Vanilla (1/2-1 tsp to taste)
Pinch of Salt
Pumpkin Pie Spice (to taste)
Cinnamon (to taste)
1/2-1 Banana, sliced (optional –> I use 1 whole)
Combine all ingredients and stir. Pour into glass container and cover. Refrigerate overnight.
In the morning, stir and then top with your favorite toppings. I always top mine with Nature’s Path Organic Flax Plus Pumpkin Flax Granola (you can find it at Costco or Target/groceries) and a spoonful of Trader Joe’s Speculoos Cookie Butter (this is a treat and not necessarily the BEST choice buy oh it’s YUMMY!)
