Yesterday, I had the privilege of guest posting on my friend Sheila’s blog ~ Eat 2 Gather. She hosts this great series called Dinner Dilemma where she invites bloggers to come share some of their solutions to bringing dinner to the table in the busyness of life. Who couldn’t use some help with that?
I shared that our family is reliant upon the slow cooker about 3 nights a week with after-school schedules. This is the recipe I shared that’s become a new family favorite:

Barbecue Beef Sandwiches

1 (3.5 pound) eye of round roast
2 tsp salt, divided
2 garlic cloves, pressed
1 (10.5 oz) can beef broth
1 cup ketchup
1/2 cup firmly packed brown sugar
1/2 cup fresh lemon juice
3 TBSP steak sauce
1 tsp coarse ground pepper
1 tsp Worcestershire sauce
Sprinkle roast with 1 tsp salt. Stir together remaining salt and next 8 ingredients. Add beef to slow cooker and then pour sauce over beef. Cover and cook on HIGH for 7 hours. Shred beef and serve on buns.
I also made a broccoli slaw mix I picked up at Trader Joe’s to top the sandwiches… and served corn on the cob with sweet potato fries.
