Happy Monday | Easy Ravioli Lasagna

Happy Monday to you!  Though I’m not a huge fan of Mondays in general {I miss my family when I send them back to school & work}…..  I woke early for Quiet Time to discover a super cool, crisp Fall morning that is just PERFECT!

Our family enjoyed some sweet time together this weekend.  And I enjoyed precious time with two GirlFriends on Saturday doing what girls love to do:  SHOPPING!  We hit the mall with purpose ~> Nordstrom’s Beauty event…. where we had our make~up done and got to try new products.  Here’s two of the three of us…..  Elizabeth and I visited the Laura Mercier counter {new to me make-up}.  Loved it!  I was due for new foundation, so I’m trying that along with some new shadows.

Lots to do today, so just a quick post to share a great new recipe I recently tried.  I love that it’s so super quick to make but still gets a home~cooked dinner on the table….  This was a big hit with my family.  I paired it with Alexia Garlic Bread and salad = DELISH!

Easy Ravioli Lasagna

  • 4 ounces hot pork Italian Sausage
  • 4 ounces 90% lean ground sirloin
  • 4 garlic cloves, minced
  • 2 cups lower-sodium marinara sauce
  • 1/8 tsp kosher salt
  • 1/4 tsp crushed red pepper
  • 22 oz bag frozen whole-wheat spinach and cheese ravioli
  • 3 oz part-skim mozzarella cheese, shredded (3/4 cup)
  • 1 oz Parmigiano-Reggiano cheese, grated (1/4 cup)


Heat oven to 375*. Cook meat and garlic until browned and crumbled. Add sauce, and seasonings; bring to a simmer. Remove from heat and add ravioli -- toss to combine.

Spay an 8" square baking dish {broiler safe} with cooking spray. Pour mixture into dish. Top with mozzarella cheese. Cover dish with foil that's been coated in cooking spray. Bake at 375* for 40 minutes.

Uncover dish and sprinkle with Parmigiano-Reggiano cheese. Preheat broiler. Broil dish for 3 minutes or until lightly browned and bubbly.


In lieu of sausage, I used all (grass-fed, humanely handled) beef. I also used a regular marinara (in lieu of low sodium). And I bumped up the cheese just a bit. I also added some Italian Seasoning over the top.

    Oh my goodness, I’m so hungry now! :) This looks delicious. You two are so cute. I love going to the Nordstrom counters and having my backup done.

    I usually spend time with friends sitting and talking over coffee or an iced tea.
