As we started The Daniel Plan, a big worry for me was saying goodbye to Oats and Wheat/Gluten for the 10 day detox. So far so good thanks in part to QUINOA. It serves great for breakfast, works for lunch, and is excellent to round out dinner.
A favorite new recipe from The Daniel Plan book is Quinoa Breakfast Bake. I LOVE this! It’s a make it once and get several breakfasts out of it dish.
The first morning I served it topped with almond butter and a few berries. Next up was the addition of slightly melted coconut butter (makes me feel as though I’m enjoying icing) and paired with eggs cooked in a little coconut oil.
Final switch was adding a serving size to a bowl with unsweetened almond milk, stirred to a consistency of oatmeal. I mixed in a spoon of almond butter then warmed it in the microwave. Topped with chopped, raw walnuts and berries this was another satisfying breakfast… and was super satisfying on a cold, snowy morning!
