What I’m Eating | Weigh~In Wednesday

SO, last check in was on 1/1 when I had just kicked off my ten day detox via The Daniel Plan.  Those ten days went surprisingly well.  Especially since we were hit with some awful weather.  I was able to give up all that was included….  except caffeine.  The minute the detox was over I made this and these to satisfy the sweet tooth in me that will never go away.
snow bunnyI lost three pounds the first full week of detox/eating clean.  And another pound since.  But I would say the biggest change has been my energy.  I was tired ALL the time when I first got started.  Within 3 days I noticed an energy increase.

I’ve found that, for now, having some basics repeated through the week help keep me on track.  Nothing worse than getting hungry and having no clue what to eat….  That usually leads to trouble!

I allow myself 2 {ok if I’m honest sometimes MORE} cups of coffee a morning.  Each with a tablespoon of coconut milk creamer.

coconut creamerBreakfast has been gluten free bread, toasted with avocado mash and egg on top.  Sometimes turkey bacon {still adjusting to the nitrite/nitrate free, but LOVING Applegate Farms commitment to ethical animal treatment; *Now available at Target!} or chicken sausages {via Whole Foods}.

I rely heavily on quinoa.  Love it’s versatility…..  It came in handy during the detox when oats weren’t an option!

And of course, especially on busy days….

smoothieLunch and dinner have found us having a lot of stir-fry…..  Usually with chicken, sometimes a lean beef.  It’s such a great way to get in tons of veggies.  And when we want to bulk it up, I found this great Brown Rice Pasta to add in….

Fruits and veggies help with snack time.  I also try to keep nuts on hand.  And water.  Still TRYING to force a gazillion ounces down everyday.

I’ve been enjoying reading The Daniel Plan, learning about Paleo eating (I’m finding that Paleo recipes are GREAT to find healthy dessert options), and chatting with the Girls in the WIW FaceBook group about their eating plans.  Interestingly, it seems to all boil down to wanting to eat as Clean and as Healthy as possible by eating as many whole foods as we can.

    You’re doing great, Kim! Thanks for the inspiration and ideas. I haven’t made vegie stir fry in a long time, so will have to make it this week. I’ve gotten back to the gym this week and been better about including fruits and vegetables in my diet. Also have purged my house of leftover chocolate. These all are helping me to get the Christmas weight off. I’ve lost 2.6 lb over the last week, so am only up 2 lb from my October weight. Have a great week!

      Good Morning Linda!! YOU are such an inspiration for working out…. I SO need to now focus on exercise. GREAT JOB on the weight loss…. getting through the holidays and now being only 2 pounds up is GREAT.     This post is so motivating Kim! I’m so proud of you, high five on the weight loss!!
    Something you said is standing out to me…having a few regular standby foods always available, that’s definitely what I’m missing right now.

    That stir fry looks delicious!! Need to find that bacon at target!

      I so believe in menu plans. But life happens. The ideas you gave me last year of chicken sausages and veggies roasted in the oven and other quick meals like that have been a life saver for times I don’t have the time or energy to plan OR to fix what was on the plan!

    You are doing awesome! And that last dish looks soooo yummy! I love stir fry and curry! The more vegetables I eat, the more I find that I am LOVING vegetables! ^_^ Congrats on the loss you are seeing already too! That is awesome. Although the added energy and physical health, that is the best!!! I did post a blog today too! ^_^ Love WIW!

    That last recipe with the pasta looks fabulous! Sorry I’ve been AWOL lately. I got sick as that happens often working with three year olds. I’ve not been exercising but haven’t been overindulging either. I hope to get back on track next week.
